EVERYTHING BEGINS IN THE VINEYARD

Appropriately ripe grapes (depending on the type of wine you want to obtain) are manually harvested in boxes.

The fruit must be delivered to the winery as soon as possible after being harvested so as not to lose its flavor. The fruit is destemmed, placed in the press or immediately placed in the tanks. Cooling takes place and the wine production process begins. The moment of fermentation is the most important, the yeast absorbs the natural sugars in the fruit, turning them into alcohol.

THE FERMENTATION PROCESS AND AGING

This is a process that takes about a week, but the wine is not yet ready for consumption. It takes at least a few months for a young wine to have time to refine and achieve its maximum potential. After fermentation, the wine goes to tanks or oak barrels, depending on the type of product we want to obtain.

Our team knows the earth and fruit. No fruit is harvested until we taste it.

OUR APPROACH

Making wine is not a job, but a skill like a painter or sculptor. The oenologist models and then shapes his product to produce his work of art. This is what wine is, the result of artistry.

Our Environment

The grapevines used to produce our wine were selected by analyzing the territory and climate of Trzebnica. In the first years of the vineyard's existence, disease-resistant varieties were planted, so they did not require the use of fungicides.

Environment

It took about a year to research and analyze the climate of various areas of Poland. After detailed verification, it turned out that the most advantageous area for viticulture, both in terms of location and climatic factors, is the vicinity of the Trzebnica Hills.

Soil

The selected region became the object of research. The land, hills and history of the place were analyzed. An interesting fact is that grapevines were grown on the Trzebnica hills over a century ago and you can still find places here that still remind you of it.
